BEEF - Custom Processing Guide:

If you are newer to placing a custom beef processing order you may want to use the below as a guide to prepare you for the conversation with the butcher.  When you call Jenniges Meat Processing in Brooten, MN please tell them that you are placing an order for yourself and that you are buying beef from Nic and Megan Olson at Plain Farms.

  1. How many steaks do you want in each package? This depends on how many people you will be serving. Usually 2, 3, or 4 steaks.  If you choose 2, then you can take out several packages if you are cooking for more people.
  2. How thick do you want your steaks cut? Usually 3/4", 1", 1-1/4", or 1-1/2" inches (do you want to cook them fast or slow, if you have time I prefer thick steaks but it takes longer to cook them)
  3. How many pounds do you want in each roast?  Again depends on how many people you will be serving usually 2, 3, or 4 lbs
  4. How large of a package of ground beef?  Usually 1, 1.5, or 2 lbs
  5. Do you want the brisket whole or ground up?  Cooking brisket takes 6-8 hours so some people choose to grind it into the hamburger.  But if you have a smoker or know how to slow cook it, it is delicious.
  6. Do you want to save the soup bones, organ meats, beef tallow or marrow bones for making broth?  Note: There is only one set of organ meats per beef so if you ordered a quarter-share of beef you will be sharing those with 3 other customers. 
    You can also order sausages and other meat sticks etc.  Please ask the butcher about these items and the added cost.  If this is your first time custom processing beef you might want to start with #1-6 above.
